White Bean, Sun-Dried Tomato & Coconut Tahini Stew

This comforting white bean stew is gentle, warming, and quietly rich, with slow-cooked vegetables, sweet-tangy sun-dried tomatoes, and a silky finish from our Original Coconut Tahini. A handful of kale adds colour, texture, and goodness, making this a simple, nourishing dish that’s perfect for slower evenings.


Ingredients (Serves 2)

• 1 can white beans (cannellini or butter beans), drained and rinsed

• 1 white onion, finely chopped

• 2 carrots, diced small

• 2 cloves garlic, thinly sliced

• About 200 g sun-dried tomatoes, roughly chopped

• About 200 ml vegetable stock

• 100 g kale, tough stems removed and roughly chopped

• 1 tsp ground cumin

• ½ tsp ground coriander

• ½ tsp ground turmeric

• 2 tbsp Coconut Tahini (Original)

• 2 tbsp crème fraîche (use plant-based if keeping fully vegan)

• Olive oil, for cooking

• Salt and black pepper, to taste


To serve:

• Fresh bread and butter, or as you like


Method

Step 1 – Soften the vegetables

Heat a drizzle of olive oil in a saucepan over low–medium heat. Add the onion and carrots and cook gently for 8–10 minutes, stirring occasionally, until soft and sweet but not browned.

Step 2 – Add the garlic and spices

Add the sliced garlic and cook for another 1–2 minutes until fragrant. Stir in the cumin, coriander, and turmeric and continue cooking gently for a further 2 minutes to toast the spices.

Step 3 – Build the stew

Add the sun-dried tomatoes, white beans, and vegetable stock. Stir well, cover with a lid, and bring to a gentle simmer. Cook for around 20–35 minutes, stirring occasionally. About 10 minutes before the end of cooking, stir in the kale and allow it to soften into the stew.

Step 4 – Finish with Coconut Tahini

Stir in the Coconut Tahini and crème fraîche. Add a splash of water if needed to loosen the stew to a silky consistency, then bring back to a gentle simmer. Remove from the heat and season with salt and black pepper to taste.

Step 5 – Serve

Serve warm with fresh bread and butter, or enjoy just as it is. Simple, comforting, and deeply satisfying.
